Spaghetti squash, 1 each will serve 8-10
Bake squash at 350 for about 1 hour....until soft.
Cut open and scrape out the seeds.
Peel the spaghetti from the squash.
1 medium onion, diced
3 roma tomatoes, diced seeds removed
1 jalapeo, diced
1 yellow or red bell pepper diced
Saut all items together until heated through.
cup fresh chopped cilantro
cup fresh Romano or Asiago cheese
Toss with squash.
Serve 4-6 oz as a side dish or a bed for a piece of fish, chicken or beef.
