Blueberry Balsamic Chicken Salad

4 oz grilled chicken breast

Salad:
1 ½ cups fresh spinach
½ cup arugula
¼ cup blueberries
1/8 cup jicama strips
1/8 cup mango pieces
1/8 cup baked or fried tortilla strips

Dressing:
2 cups olive oil
½ cup blueberries
¼ cup balsamic vinegar
¼ cup brown sugar
2 tsp cinnamon
1 tsp salt
2 tsp black pepper

To Plate:
Salad on plate
Sliced chicken
Salad dressing
Tortilla strips on top
