Savor Recipe 66 Jicama Salad with Ahi Tuna

Fresh Tuna w/Crispy Almond Crust/Jicama Salad

Ahi tuna 4 oz. filet
Dip in lime juice.
Press into flesh on each side.

Crust
cup crushed almonds
cup tortilla chips crushed
tsp dried ancho chilies
Press crust into each side of the fish.

Heat saut pan to medium high.
Place 2 tbsp olive oil in pan.
Sear breaded fish on each side for about 30-40 seconds.
Just brown the outside crust.
Leave inside rare. DO NOT OVERCOOK.

Jicama Salad
2 cups Jicama shredded in inch x 2 inch strips
cup red onion shredded in strips
Jalapeo diced (stem and seeds removed)
cup whole natural almonds
cup fresh chopped cilantro
Avocado diced, 1 each
Toss together.

Add:
cup lime juice
2 tbsp honey
Pinch of salt

To Serve:
Place cup salad on plate.
Slice tuna thin place on top of salad.
Garnish with wasabi paste or siracha hot sauce.
