Savor Episode 58 Poached Fish with Reisling

Poached Fish with Reisling

4 portions white fish 4-5 oz
2 cups reisling wine (chenin blanc will do)
Salt & pepper to taste
2 tbsp fresh basil
Juice from 1 fresh lemon
1/8 cup cream

Prepare:
Pour wine into full size steamable pan.
Add cream.
Place fish in wine mixture.
Sprinkle other ingredients over the fish evenly.
Cover.

Bake at 350 for 20 minutes until internal temp is 140-145.
Pour liquid into sauce pot.
Bring to boil and thicken with a cornstarch slurry. ( cup cornstarch
to cup liquid)
Pour sauce back over the fish.

Serve.
