Savor Recipe: Waldorf Salad with Wild Rice, November 28, 2013

A heart healthy Waldorf Salad.
Wild Rice Waldorf Salad

2 cups cooked wild rice
1 diced red apple (soak apples in lemon juice)
1 diced green or yellow apple
1 red bell pepper diced
1 cup diced celery
½ cup diced red onion
½ cup raisins
½ cup walnuts or almonds
Dressing:
½ cup canola oil
¼ cup honey
½ cup orange juice
½ cup low fat sour cream
1 tsp coriander
1 tsp cinnamon
½ tsp salt
Blend until smooth.
Add all ingredients and toss.
Garnish with a swirl of caramel.
