Cut down on the calories with a turkey meatloaf instead of beef.
Turkey Meatloaf

8 servings
Mix Together:
2 lbs ground turkey
1 ½ cups cracker or rice crumbs
¼ cup dijon mustard
1 tbsp garlic powder
1/8 cup ketchup
1 tsp puréed chipotle pepper (optional)
Place half of mixture in a 4” baking dish to make a 4”x8” loaf.

Mix:
2 egg whites
1 cup cooked, drained, chopped spinach
In middle of turkey mix, pile spinach mix in 2” swath all the way down the 8” side.
Place the other turkey mix on top, encasing the spinach in the middle.
Bake at 350˚ for about 40 minutes until internal temp is 175˚.

Serve with chipotle ketchup:
1 cup tomato sauce
¼ cup brown sugar
1/8 cup dijon mustard
1 tsp chipotle pepper
Blend until smooth.
