Savor Recipe: San Angelo Casserole, January 23, 2014

A great heart healthy turkey casserole.
San Angelo Casserole

Serves 6
1 diced bell pepper
1 diced yellow onion
1 lb ground turkey
2 tbsp chili powder
1 tbsp garlic powder
2 tsp ground cumin
1/8 cup chopped cilantro
1 diced jalapeño
Pinch of salt
3 cups tomato juice
½ cup tomato paste
2 cups cooked quinoa
3 cups shredded mozzarella cheese

Prepare:
Sauté turkey in 2 qt skillet and brown.
Add veggies.
Cook until turkey is cooked through and veggies are hot.
Add spices.
Add tomato products.
Add quinoa.
Mix.
Place 1/3 mixture in 3 qt casserole dish.
Layer 1 cup cheese on top.
Repeat.
Finish with cheese.
Bake at 350˚ for 30 minutes until cheese is brown
and internal temp is 170˚.
