Heart healthy salmon recipe.
Salmon with Boc Choy/Rice Noodles & Ginger Sauce

8 servings
Salmon Filets Rub Mix:
1 cup brown sugar
2 tsp dry mustard
½ tsp ginger
2 tsp garlic powder
1 tsp salt
1 tbsp lemon pepper
Rub even coating of mix on salmon and bake at 375˚ for about 12 minutes. Set aside.

6 cups boc choy
1 cup medium, sliced red onion
½ cup water chestnuts
4 cups Chinese cabbage, sliced thin
Stir fry and set aside.

4 cups cooked rice noodles
1/8 cup fried won ton strips per serving (optional)

Ginger Sauce:
¼ cup fresh ginger
1 cup sesame oil
1/8 cup soy sauce, low sodium
6 garlic cloves
1/8 cup brown sugar
1/8 cup lemon juice
1 jalapeño
Blend sauce until smooth.

To Serve:
Place 2 oz rice noodles on plate.
Place 3 oz stir fry veggies next to them.
Pour 2 oz sauce over both.
Place salmon on top.
Garnish with fried won ton strips.
