Savor Recipe: California Chicken Tacos & Asparagus, February 20, 2014

Lowfat, lighter, and fresher version of a taco.
Asparagus and Chicken Tacos California Style
6-8 servings:

2 cups raw chicken strips ¼ x 2 inch
2 cups cut fresh asparagus ½ inch pieces

Toss with:
1 tsp paprika
1 tsp garlic
¼ tsp red pepper
1 tsp black pepper
1 tsp chili powder
Pinch of salt

Heat a sauté pan,.
Add 2 tbsp canola oil and toss in the ingredients.
Sauté until the chicken is cooked through…about 3-4 minutes. (170 degrees)

Heat up corn tortillas.
Remove.
Place on serving plate.
Place 1/3 mixture in middle of tortilla.

Add:
1 tsp chopped onion
½ tsp chopped fresh cilantro.
1 tbsp feta crumbles.

Serve with fresh salsa.
