Chicken and Mexican squash dish that's nutritious and heart healthy
Calabaza: Chicken, Beef or Fish
8 servings:

2 lb sliced fresh chicken strips.
Seasoning: 1 tsp each:
Paprika, chili powder, garlic powder, black pepper, cumin, ½ tsp salt
Toss with meat.
Sauté or grill until cooked through.

Calabasa:
3 zucchini squash, sliced
1 medium sliced onion
1 tbsp olive oil
1 jalepeño fresh, chopped & seeded
1 medium fresh tomato, wedge slices

To Prepare:
Season meat.
Grill or charbroil meat with olive oil.
Place oil on grill add garlic, then zucchini and onions.
When veggies are heated through (not limp) pull from grill and add other
ingredients.
Mix well.
Place cooked meat on sides of serving pan with Calabasa in the middle.
Serve with tortillas.
