Savor Cooking Show honors our First Responders with a Grilled Rib-eye Salad

Barley Mushroom Salad for Grilled Meats

3 cups cooked barley
1 cup roasted corn
2 cups sauteed mushrooms
2 cups trimmed whole green beans
4 cups arugula
¼ cup chopped sun dried tomatoes
½ cup blanched slivered almonds
½ cup raisins

Dressing:
½ cup red wine vinegar
¼ cup mustard
½ cup olive oil
¼ cup dates or figs
1 tsp thyme
Place in blender.
Blend until smooth.

To Serve:
Toss salad ingredients together.
Pour ½ the dressing on the salad and toss.
Place 2 cups on each plate.
Serve with grilled steak (or any grilled protein…or none)
Garnish with remaining salad dressing.
