Mahi Mahi with Pineapple Salsa - April 17, 2014

Fabulous fish that's low in mercury and high in protein.
Mahi Mahi with Pineapple Salsa

4 pieces of Mahi Mahi
1/2 cup finely chopped fresh pineapple
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1 cup frozen corn kernels, thawed
1/2 (15 oz) can black beans, drained and rinsed
1/4 cup chopped onions
1 green chile pepper, chopped
3 tbsp of orange juice
1/4 cup chopped fresh cilantro
1/2 tsp ground cumin
Salt and pepper to taste.

To Prepare:
In large bowl, toss all ingredients together except fish, salt, pepper.
Cover, and chill in the refrigerator until serving.
Heat oil in large skillet over medium heat.
Season fish with salt and pepper, to taste.
Cook fish for 3 minutes; turn and cook until just opaque, about 3 to 4 minutes more.
Transfer fillets to individual plates.
Spoon salsa on top of fish as desired.
