and Balsamic Dressing
2 cups watermelon (seeded & rind off)
¼ cup crumbled goat cheese
Chopped mint leaves
3 cups vegetable stock
1 cup quinoa
Bring stock to a boil.
Add quinoa. Bring back to a boil.
Turn to medium. Cook until quinoa opens
(about 15 minutes.) Cool & stop cooking.
Toss Quinoa with:
¼ cup diced red onion
¼ cup diced tomato
¼ cup diced cucumber
1/8 cup balsamic vinegar
3/8 cup olive oil
Blend until smooth
Place ½ cup quinoa on plate.
Place watermelon salad on plate.
Place ½ cup blackberries or blueberries on plate.
Drizzle balsamic dressing over plate.
