10 large cabbage leaves slightly poached to be plyable
Place stockpot on stove. Bring to a boil. Drop in cabbage leaves. Blanch for about
2 minutes until workable. Rinse & cool down.
Mix in a bowl:
1 lb cooked ground turkey
2 cups bread or rice crumbs
1 diced medium onion
½ cup cooked brown rice
1 chopped jalapeño pepper
1 bunch chopped cilantro
1 ½ cups shredded mozzarella cheese
1 tbsp garlic powder
1 tbsp ground cumin
2 tbsp paprika
1 cup tomato sauce
Salt to taste
Divide mixture into 10 and place into the middle of the cabbage leaves.
Place in baking dish.
Cover with sauce:
4 cups canned dice tomatoes
2 tbsp chipotle peppers
2 tbsp chili powder
½ cup beef stock
Blend ingredients until smooth.
Cover cabbage rolls with sauce.
Sprinkle ½ cup mozzarella cheese over sauce.
Bake in 375 oven for 20 minutes.
