½ cup diced ham
1 cup diced onion
Diced red bell pepper, 1 each
1 cup canned diced green chilies
Saute above ingredients together until heated through about 5 minutes.
6 cups V8 juice
4 cups vegetable or chicken stock
Bring to a boil.
4 cups split peas
Bring back to a boil.
Turn to a simmer.
Simmer for about 40 minutes until peas are tender.
Place 6 oz. soup in bowl.
Garnish with plain yogurt and crushed cashews.
