Sesame Coated Salmon Salad/Asian Dressing

Rub salmon filet with olive oil.

Sprinkle and press onto the top of the fish:
1 cup sesame seeds
¼ cup lemon pepper
1 tsp red pepper flakes
Bake at 375˚ for about 10 minutes. Internal temp should be 135˚.
Set aside.

Salad Mixture:
2 cups chopped Chinese cabbage
¼ cup bean sprouts
1/8 cup chopped green onions
1/8 cup water chestnuts
1/8 cup dry roasted peanuts

¼ cup low sodium soy sauce
¼ cup balsamic vinegar
1 cup olive oil
½ cup sesame oil
¼ cup peanut butter
¼ cup molasses
1 tsp Sriracha Sauce/or Tabasco (add more if you want hotter)
Blend for 2 minutes.

To Build:
Salad on plate
2 oz dressing
Salmon on top
