Savor Recipe: Salmon Nicoise Salad from August 8, 2013

- Salmon Niçoise Salad

Each Salad:
1 cup chopped romaine lettuce
Cooked & cooled green beans (vert)
4 sliced tomato wedges
6-8 red bell peppers, sliced thin
6-8 red onions, sliced thin

Salmon filet, baked with spice rub
1 tbsp salt
2 tbsp paprika
1 tbsp brown sugar
2 tbsp lemon pepper

Bake at 350˚ for 15 minutes (135˚ internal temp)

1 cup olive oil
1/3 cup rice vinegar
2 tblp mustard
1 tbsp sugar
1 tsp dry oregano
1/8 cup fresh basil
½ tsp salt
Blend until smooth.

To Plate:
Arrange lettuce on plate.
Arrange veggies on top.
Place salmon on top.
Ladle 2 oz dressing on top.
