Quinoa Stuffing
8 servings:

3 cups cooked quinoa (cook & rinse)
1 ½ cups crushed, baked tortilla crumbs (bake some prior)

Sauté together:
¼ cup olive oil
1 cup onion
2 cups diced celery
½ cup diced red bell pepper
1 cup diced mushrooms
1 diced medium jalapeño

Add:
Quinoa and corn chips
1 ½ cups beef broth
½ cup fresh chopped parsley
2 tbsp black pepper
1 tbsp sage
1 tbsp cumin
1 tbsp chili powder
Mix well.

Place in shallow steamable pans.
Cover & bake at 350˚ for about 30 minutes until internal temp is at least 175˚.
