Lentil Salad with Shrimp

8 servings

2 cups cooked lentils
4 cups chicken stock
Bring to boil.
Turn to simmer.
Cook for about 30 minutes until tender.

1 cup garbanzo beans or hominy
2 chopped tomatoes
½ cup diced green onions
1 diced serrano or jalapeño pepper
1 chopped yellow bell pepper
1 chopped, ripe mango
1/3 cup chopped cilantro
1/3 cup chopped parsley
1 cup cooked shrimp or seafood

Whisk Dressing:
1/8 cup lime juice
½ cup olive oil
1 tsp salt
2 tsp tarragon
2 tsp coriander powder

Toss dressing with salad ingredients.
Garnish with grated lemon peel.
