¼ cup olive oil
6 cups fresh turnip greens
¼ cup chopped bacon
1 cup onion
1 tbsp minced garlic
2 cups cooked red quinoa
½ cup chopped tomatoes
Fresh figs & feta cheese for garnish
In a 3 qt sauce pot, add olive oil, garlic & bacon.
Cook them down until heated through.
Add quinoa & tomatoes, heat & stir.
Spoon ½ cup on plate, garnish with figs & feta cheese.
