1 cup small, diced grilled cooked chicken
2 cups chopped leaf lettuce (small pieces: ½” x ½”)
2 tbsp slivered or whole almonds
1/8 cup raisins
2 tbsp diced red onion
1/8 cup diced tomatoes
1 each diced fresh pear
2 cups olive oil
1 cup lime juice
½ cup sugar or sweetener substitute
1 tsp salt
2 tbsp black pepper
Blend in blender until smooth.
Place all ingredients in bowl with 2 oz dressing and toss.
