Savor Recipe: Arugula, Pistachio & Mozzarella Salad with Cilantro Pesto from August 22, 2013

Arugula, Pistachio and Mozzarella Cheese Salad
Tossed with Cilantro Pesto

Each Salad:
2 cups arugula
¼ cup pistachios
¼ cup mozzarella cheese (small slices, shredded or balls)
¼ cup Kalamata olives
1/8 cup dates or figs

Cilantro Pesto:
¾ cup olive oil
¼ cup fresh cilantro
¼ cup roasted red bell pepper
1 tbsp honey
1/8 cup parmesan cheese
Blend until smooth.

To Serve:
Place all ingredients in bowl.
Toss with 2 oz cilantro pesto.
