Cantaloupe Stuffed w/Shrimp Salad
Cantaloupe half, one each, seeded and peeled
Mixed greens (1"x 1" pieces) 2 cups each
Tomatoes 5 wedges each
3 cups, 50-60 count shrimp
2 cups sliced cucumbers, peeled and seeded
1-1/2 cup red or black grape halves
1/4 cup honey
1/4 cup wine vinegar
1 cup olive oil
1 tsp garlic powder
1 tsp black pepper
1 cup mango
(option) 1/8 cup triple sec liquor
Place ingredients in blender and blend until smooth.
Mix shrimp salad ingredients with the dressing.
Arrange the mixed greens on a plate.
Set cantaloupe on greens.
Fill with 6 oz. shrimp salad.
Garnish with tomato wedges.
