Corn tortillas 1 each
6 fish filets (3 oz each)
2 oz olive oil
2 tsp fresh garlic
Juice from 2 lemons
Salt & pepper to taste.
Arrange fish on baking pan.
Mix other ingredients together & pour over fish.
Bake at 400 for about 12-15 minutes.
Internal temp should be about 150.
Fry corn tortillas until crisp.
Mix 1 cup thinly shredded green cabbage with 1 cup of red cabbage.
Make orange dressing in blender until smooth:
1 jar of orange marmalade (12 oz)
3/4 cup rice vinegar
1/4 cup triple sec
1/2 of a habanero pepper or 1 jalapeo
In tortilla, place about 1 1/2 oz baked fish.
Place cabbage on top.
Ladle 1/2 of dressing on top of cabbage.
