Herb & Dijon Crusted Salmon

San Angelo, Tx - Herb and Dijon Crusted Salmon
Serves 4
1 cup loosely packed parsley
2 each green onions
2 tbsp fresh dill
11/2 tbsp drained capers
Zest of 1 lemon
2 garlic cloves
2 tbsp Dijon mustard
Salt and pepper
Pinch red chili pepper flakes
Olive oil
4 pieces of 5-6 oz salmon filets


To Prepare:
Add parsley, green onions, dill, capers, lemon zest, garlic cloves, and red chili pepper
flakes to the center of large cutting board. Chop until ingredients are finely minced.
Rub salmon with some olive oil, sprinkle with a little salt and pepper, then coat just the
tops of each salmon with Dijon mustard. Take the coated side of each salmon and press
into the minced herb mixture, set aside.
Heat a non-stick skillet with a little olive oil and place salmon into the skillet herb side
down and cook on medium for 2-3 minutes, then turn salmon over and let cook till
done, approximately 3-4 minutes.
*Serve over a mixed green salad or as the entrée with your favorite sides.
